Ground beef is a staple meat I keep in the freezer always. When I can't think of anything else to prepare, then there is always ground beef.
You can make them into burgers, meatloaf, casserole, ground beef Bolognese, chili, sloppy joes, beef enchiladas, egg rolls, spaghetti, nachos, tacos, etc, etc...
Or you can just sauté it with an assortment of vegetables!
Sautéed Ground Beef with Vegetables
This dish is never the same for me because Sautéed Ground Beef is so versatile, and you can have any combination of vegetables to add to it.
Today, in addition to the ground beef, I used:
Start with frying the potatoes and carrots.
When that is done, set it aside in a utility plate.
With the same pan and oil, sauté the garlic, onions, and tomatoes.
Add the ground beef.
Stir fry until the meat is browned.
Add salt, pepper, and chili flakes (optional). You may add paprika if desired.
Let the beef cook for 2 minutes to get the flavors in. Taste and add more salt and pepper to your liking.
Add the corn. Cook for a minute.
Add the chickpeas. Cook another minute.
Add the green beans. Cook for two minutes.
And finally, add back the fried potatoes and carrots.
Cook for another minute or so, and your done!
Sauteed Ground Beef with Vegetable can be served as is, with rice, or whipped potatoes, or bread, or tortilla and salsa...
