Turshija or zimnica-special peppers with honey used during winter

In my country, special food is often made that is consumed during the winter, usually it is related to vegetables that are not available during the winter. It is usually put in special jars, and is either eaten as food or some kind of salad, it usually has a sour taste. We call it zimnica or turshija,some kind of pickle a fermenting vegetables for salads and meals.
I really like salads from zimnica. This year I helped my mum to prepare special food for zimnica. Today I will share the recipe for peppers with honey .We prepared many jars and we will eat during the cold days during the winter. It can be served with some meat or baked potatoes.

Wash 5 kg of red peppers and remove the stems and seeds. Cut the peppers into equal ribbons.
Arrange the peppers vertically in the already prepared jars

Press the peppers in the jar with something

Add 3 liters of water to a large saucepan

Put it to boil and add 1 preservative

**Add 250 grams of honey,

**150 grams of sugar, **

50 grams of salt and

**60 grams of essence or alcoholic vinegar****
When it is boiled put aside

Add prepared liquid with honey in each jar and close it .When each jar is finished put in a big plastic box and wrap with some blanket in order to be warm

After several days you can open it and taste it with some meal, but I prefer it to wait me till the winte,r when I open the jars when it is some special lunch organized.
