What do you mean, you don't like the food in Morocco?

Sitting on the edge of a seawall watching the boats, we were chatting to an Aussie guy and his Turkish girlfriend.

'What do you think of the food in Morocco?' he asked. I gushed that I loved it. He didn't. It's not salty or spicey enough for him. Funny, because their moderate use of salt and sugar is what I LIKE about Morocco.

Let's talk about what we have been eating here. Jamie loves a kofte tagine, which are like small meatballs in a tomato stew usually flavoured with cummin, paprika, salt, pepper, onion, parsley, and cilantro. Sometimes there is also an egg in there. Like most tagines, it's served with bread.

'Have you tried harrissa?' I asked. He hadn't. His girlfriend turned up her nose - she doesn't like salt. Harrissa is the salt and chilli one might miss. If you're lucky it will get served with olives and bread at the table.

Me, I like a vegetable tagine. This will be served with whatever vegetables they have to hand, often pumpkin, potato, zucchini and carrot and onion.

After a surf yesterday we had Berber eggs - this version had tomato, cummin, parsley, onion - the eggs are cooked in the sauce and it's served with bread. It'll cost about $3 AUD or Β£1.50. Add some tea morrocaine (Moroccan green tea with mint) to complete. Sometimes there's extra cummin in a shaker to add.

Olives are a common staple here too. Stuffed with garlic or marinated in harrissa or salted preserved lemon, they are to die for if you are an olive fan. I have some, and some harrissa, in the fridge for when I make dinner at home in the Landie - usually some kind of lentil salad or bean stew or veggies sauteed with rice.

One of my favourites is the bbq fish, because it's not intense fishing. We have been watching the boats go in and out of the bay in Imsouane and the fish is cleaned right there and the restaurant cooks it for you. How can you get fresher than that?

This was served with french fries and Moroccan salad, which is chopped tomatoes, onion and parsley. So good.

Jamie accidentally ordered me the wrong meal and as I refuse to let things go to waste, I ate it, even if it was lamb which I don't normally eat. It was really good, with apricots, prunes, walnuts and cinnamon. Sorry lamb.
