Have you ever eat a tofu; but on reverse mode?

Hi foodies! Today, I would like to introduce you to one of the most popular snack in Indonesia, called Reversed Tofu or Tahu Balik/Tahu Walik.

Reversed Tofu is actually a stuffed tofu; but as the name implies, in the process of making it, the inside part of tofu is reversed so that the final outer layer of the stuffed tofu has a unique texture; crunchy and exquisite.

As the first step, the tofu was deep-fried; just like what we do when making a regular fried tofu. So initially, we will have a normal fried tofu wkwkwkw Second step includes the preparation of filling; the tofu can be stuffed by different fillings; original filling resembles a meatball in terms of taste and consistency; the other might prefer to stuffed their tofu with mozarella, sausage, or other filling that fit their taste. The third step is the one that differs normal fried tofu with reversed tofu. The regular fried tofu was sliced halfway in the middle; so now we have access to the inside part of the tofu. After that, the soft, white part inside the tofu was removed; now we have a hollow. after that, just reverse the tofu so that the dry, brown outer layer now in the inner side. The fourth step of course to stuffed the tofu. After that, just deep-fry the (now called) reversed tofu once again

Last, pour the sauce on top. The sauce may vary; in this picture, the sauce is called "Hot Spicy Sauce". Basically it is just like regular sauce with red color and low viscosity. The original reversed tofu sauce from Binjai (a city in North Sumatera Province, Indonesia) has a greenish color and higher viscosity. This spicy sauce also includes chopped celery and fried onions.
