Start pickled red onions first.
Start by thingy slicing 1 large red onion then adding to a mason jar.
In a small pot add 1 1/4 cup apple cider vinegar,1/3 cup keto friendly sweetener,1T salt bring to a boil.
Pour over red onions until completely covered. Wait at least 30 minutes.
Season 2 pounds of ground beef with 1T chili power,1.5 t of cumin,paprika,cayenne,garlic,onion powder each. Salt and pepper to taste.
Brown beef then add half cup small diced onion,2 jalapeños.Set aside.
Whisk together 8 eggs,1/2 C heavy cream,1T mustard and onion powder.
Combine egg mixture with you browned beef in a 8 x 8 baking dish. Cover with cheese.
Cover and bake at 350 for 25-30 minutes or until egg are firm.
Garnish with cilantro and red onions.
