Quang noodles-a special dish of my hometown

Hi everybody. How are you today? I am very happy that I received a negative Covid-19 test result today. I have yet to go out of my area for the safety of the community except that I am allowed to go out for groceries and emergencies.
Today I am back in the kitchen and would like to introduce to you my hometown's speciality food. It's Quang Noodles.

I used to eat this dish when traveling in Hue, Nha Trang but its taste was not what I expected. I think that because they are not local people of Quang Nam Province, it is difficult for them to cook special food in this region.
Do you guys still like the chicken dish in my previous post? Today I used chicken again as the main ingredient for this dish. But the cooking method is completely different from the previous dish.
Here is the list of ingredients for this dish.

This is a type of noodle made from rice flour. It is very difficult to replace one type of noodle with another for this dish.

The picture above is a testament to why I have so many banana trees in my garden mentioned in my last post. They are really popular in the cuisine.
Food preparation

  • Wash the chicken and then cut it into bite-sized pieces.

  • Pick up the vegetables then mix them together and wash them.
  • smash lemongrass then cut into pieces.
  • Sliced ​​red onions and hot chilli peppers.
  • minced garlic and chives.

Cooking

  • Put the oil in the pan and wait until the oil is hot, then add the garlic, chives, Shallot until they turn brown, then add the chicken and start seasoning: 2tsp salt, 2tsp sugar, 1tsp MNS, 1tsp oyster sauce, 2tsp sate, 1tsp fish sauce. We stir-fry the chicken with medium heat so that the chicken is fully spiced.

  • Add 3/4 liters of water and cook for about 10 minutes from the time the water boils, then turn off the heat.

  • While waiting for the water to boil, put another pan on the stove and add the oil. When the oil is hot, we add in the shrimp chips to fry. We get the image below.

This bowl of soup is not a complete dish. This speciality dish is combined as follows: first put the noodles in a bowl (this dish will taste better when used in a bowl) then add this soup. Then came vegetables and shrimp chips. Don't forget to add some peanuts.

Because it's a special dish in my hometown, everyone makes this dish every time a large or small party is held. Its rich taste makes me proud of my hometown's speciality and that's why I want to recommend this dish to all of you around the world.
