Pap and beans: Delicious breakfast combo

Pap or what we call Akamu is a corn meal porridge-like dish that is enjoyed in Nigeria with the combination of other foods. Pap is eaten with fries, like Akara, fried plantain, fried potatoes, Moi-moi and just to mention a few...
And it is mostly eaten as breakfast meal. In this post I'll share with you how I made vegan porridge beans to combine with my pap.
Pap (Akamu) and Beans is a healthy Nigerian breakfast combination which provides enough energy to last beyond lunch.

Today we're going to use an already processed pap, perhaps soon I'll show you how to process pap using corn.

So below are the ingredients I used to cook my breakfast meal:

For the beans

  • 1 Cup of beans
  • 1 cooking spoon Palm oil
  • 1 tablespoon pepper
  • Salt to taste
  • 1 medium size onions
  • 3 pieces of dry ginger and turmeric
  • Small bunch of fluted pumpkin leaves

For the pap

  • 1 mold of pap
  • 2 tablespoons of milk
  • 1 tablespoon sugar

The first step for this recipe is to start cooking the beans. And to do it, I first washed the beans and added it to a pot of boiling water. The water should be enough to cover the beans very well

Next, I chopped the onions, pumpkin leaves, and grated the ginger and turmeric

I waited for the beans to get very soft then I added the onions, salt, pepper, ginger/turmeric and stirred them together.

I stirred them together and allowed it to cook down for a while, then I added the oil to it, cover the pot and allowed it to also cook down...

I made sure the oil blended well with the beans and then it was time to add the leaves:

After the leaves cooks down in some seconds the beans was ready so I put it down the heat...

Next I was boiling water for the pap. When I put the water to heat I started to dissolve the pap

I put the pap in a plate and added water to it, and I was melting the pap to form a paste.

Next I poured the well boiled and bubbling water to the paste till it thickens

After that, I dissolved the milk and sugar in water and added it to the pap and it was ready!

I served both the pap and the beans in a plate, and breakfast was ready!
