Transforming Overripe Bananas Into Delightful Snacks

People often overlook overripe bananas and other fruits. Some say they are inedible anymore. However, we learned the importance of food preservation, which enables us to use available ingredients creatively in our cooking. We learned to be resourceful because it's important nowadays, particularly with millions of people facing starvation worldwide.

Last month, we harvested bananas and other fruits from our farm, but some remained uneaten. Since we have abundant food, we can't consume it all at once. Some were given, some were cooked, but those that were left behind had already become overripe. Instead of throwing over ripped bananas, why not transform them into delightful snacks? Some people avoid cooking overripe bananas because they are already quite sour, but in my experience, cooking overripe bananas makes the finished product sweeter. What do you think?

With the ingredients on hand, I prepared delightful snacks. Overripe bananas can be used to make pancakes, bread, and smoothies. We just need to be creative in the kitchen.

Ingredients:

  • Bananas (overripped)
  • Flour (I used all-purpose flour)
  • Baking soda/powder
  • Evaporated milk
  • Condensed milk
  • Eggs

You can also add vanilla, but it's not currently available. Simply measure each ingredient according to your desired amount.

A little assistant was with me. When she saw me preparing the ingredients on the table, she sat down and asked for them, eager to make her own. This kid loves watching videos on how to make cakes and ice cream. I bet she will love cooking when she grows up.

After combining all the ingredients in a large bowl, I realized I still had some chocolates I had purchased in Hong Kong. I kept some chocolates to give to some friends, but they didn't arrive when I expected them to. I cut the Tobleron into pieces and mixed them into the batter. I saved some for toppings. Despite knowing that Tobleron chocolate shouldn't be used for toppings because it melts when cooked, I still decided to try it.

Preparing and cooking banana cake is so easy. We can even make it without an oven. I used a dry pan with no water to steam the cake. This procedure is an alternative way of cooking cakes when you don't have an oven. I cooked them at a lower fire to avoid burning the cake.

This is a soft and delightful banana-chocolate cake snack. So simple to make! Just combine all ingredients, then bake or steam. That's all! After that, you'll have delicious snacks for your siesta.

Chocolates really complement bananas. You can add nuts, too, for a better taste. But this one tastes so good! Among all the banana cakes I made, this was the best for me. This cake is not excessively sweet, which I appreciate because overly sweet food can sometimes suppress my appetite. My mom loved it too.

Being resourceful in the kitchen is essential nowadays, especially since the inflation rate isn't going down. As the years go by, everything gets more expensive. Let's be grateful for the abundance of blessings we received. Don't overlook overripe fruits or any food that appears to be inedible anymore. You can find ways to cook them as long as they are still safe, with a touch of creativity in the kitchen.
