Let's prepare a delicious pudding with coconut milk.

Good evening, friends! How are you all doing? Today, I’ve brought another delicious recipe to share with you. This time, it’s a tasty pudding made with coconut milk. Coconut milk is an essential ingredient in Sri Lankan cuisine, holding a special place in our food culture. Along with coconut milk, this pudding is made using simple ingredients like eggs and sugar. There are no complicated ingredients involved, making it a straightforward dish to prepare.

This was a new experience for me because, although I have made banana pudding before, this is the first time I’ve tried a pudding like this. Unfortunately, I faced a small setback when the electricity went out during the preparation, so I couldn’t finish the pudding successfully. I apologize for that! However, I can assure you that the taste was amazing.
Now, let’s take a look at how to make this delicious pudding!

Required Ingredients...

🍀 Coconut milk 400 ml.
🍀 8 Tablespoon of sugar.
🍀 2 Egg.
🍀 2 cardamom pods, crushed well.
🍀 Hot Water 1000ml.
🍀 3 Tablespoon of Water

Method of making....

First, take a bowl and crack two eggs into it. Add a pinch of cardamom and beat the eggs well until they are smooth and frothy.

Next, add about 4 tablespoons of sugar to the coconut milk. Mix it well until the sugar dissolves completely into the coconut milk.

Next, combine the coconut milk mixture with the beaten eggs. Mix them thoroughly until both are well incorporated.

Next, place a pan on the stove and let it heat up. Then, add about 4 tablespoons of sugar to the pan and stir continuously. As the sugar begins to melt, add 3 tablespoon of water and continue stirring until the sugar caramelizes and turns a beautiful golden-brown color.

After that, take the mold or dish where you'll set the pudding and evenly spread the caramelized sugar across the bottom of the dish. Make sure it covers the surface well.

Next, pour the prepared coconut milk mixture into the dish with the caramelized sugar. Use a fine strainer to filter the mixture as you pour it, ensuring a smooth texture for the pudding.

Next, take the rice cooker and place a steaming tray inside it. Add 1000 ml of hot water to the rice cooker. Then, the prepared pudding mixture into the steaming tray and close the lid of the rice cooker.

Then, steam it for about 40 to 50 minutes and remove it from the heat. After taking it out, let it cool for about 2 hours in the refrigerator before serving.

So, this pudding is really delicious! You should try it too. It's a perfect dessert to serve after a meal, and even kids love it. Since it contains no artificial flavoring, it’s great for your body as well. During the preparation, there was a power cut for about 10 minutes, but I think it would have set perfectly otherwise. However, the aesthetics might have suffered a bit. Well then, I’ll see you with another new dish next time!
