Existen muchas variedades o ingredientes extras de este postre; sin embargo, la base de este plato tan versátil es: la leche, los huevos y el azúcar.
Se dice que su nombre viene dado por parecido a los quesos llaneros: redondo y con huequitos.
Recuerdo que la primera vez que yo probé un quesillo fue cuando tenía 12 años de edad. Ese quesillo me lo regaló una amiga de mi tío Daniel, y cuando lo probé, inmediatamente quedé enamorada de aquel postre. Entonces esa amiga me obsequió su receta.
Lo que me impresión de aquella receta, fue que era muy fácil de elaborar; solo cuatro ingredientes: leche condensada, huevos, azúcar y ron (2 latas de leche condensada, 6 huevos, ron al gusto y 8 cucharadas de azúcar para el almíbar).
Desde ese entonces, elaboro mi quesillo con aquella receta.
Sin embargo, siempre he tenido la curiosidad de probar otras formas de hacer el quesillo para probar si son mejores que mi receta de siempre.
Pues les cuento que el día llegó. Ayer me decidí a probar otra receta que es la hoy les traigo.
Antes de comenzar les comento que para este quesillo que hoy les enseñaré a preparar, estoy usando la leche condensada casera que les enseñé en la anterior publicación.

- Hacer el caramelo colocando el azúcar en la olla donde se cocinará el quesillo, y agregarle dos cucharadas de agua.
- Cocinar a fuego medio-alto moviendo el recipiente para que se cocine uniformemente hasta formar un caramelo de color ámbar. Estar pendiente de no cocinar demasiado porque de lo contrario el caramelo tomará un sabor amargo.
- Una vez listo el caramel, mover el recipiente para que el caramelo cubra hasta la mitad de las paredes de la olla.
- Dejar enfriar el caramelo hasta que cristalice.

- Colocar lo huevos en el vaso de la licuadora y licuar por 30 segundos.
- Añadir la leche condensada, la leche líquida, el azúcar y el ron y licuar hasta integrar por completo los ingredientes (aproximadamente 30 segundos)
- Vaciar la mezcla en la olla que contiene el caramelo.
- Tapar y cocinar durante 45 minutos, en el horno o en baño de María. Al introducir un cuchillo debe salir limpio.
- Dejar enfriar a temperatura ambiente y luego llevarlo a la nevera por lo menos durante 2 horas.

Keep the quesillo refrigerated.
