Hello dear community, I hope you are doing well. For this new publication I made some mini tartlets and filled them with a mus de parchita, ideal for sharing at meetings and very easy to make. Here I show you how I made them.
Ingredientes:

250 gramos de mantequilla o margarina
2 huevos

Un chorrito de vinagre y una pizca de sal

Procedimiento:
Para elaborar esta base debí tener la mantequilla muy fría, ya que se coloca con la harina directamente y se va frotando con las manos para crear como un arenado en la masa.
Procedure:
To elaborate this base I had to have the butter very cold, since it is placed with the flour directly and rubbed with the hands to create a kind of sanding in the dough.
Then add the eggs, sugar, salt and a dash of vinegar,
Do not knead too much, and then refrigerate for half an hour. As the mold is small, with small balls I integrate it from the bottom to the edges, removing the rest of the dough.
They are then refrigerated, as the contact with the hands makes the dough soft.
After this process, preheat the oven to 180 degrees and before putting them in, prick the base with a fork so that they cook well and do not swell.
They were thus golden brown and crispy.
For the filling I prepared something very simple with parchitas,
Which I blended with very little water, then I strained them and put them in a pot with sugar to taste, not too sweet, and before boiling I added a few spoonfuls of cornstarch to give it a thick consistency.
I let it rest and cool.
I filled my tartlets with this parchita mus and it was very delicious and ideal for a snack with my family. This recipe yields many tartlets of this size, I had about 80.
