💪Rico y Nutritivo Enrrolladitos 🍃
Until one day I was chopping potatoes for a stew and she waited for me to be careless to take a piece, when I bit into the potato she found it so unpleasant that she almost threw up. Nowadays, my daughter doesn't eat potatoes, not even raw or boiled 🤭.
- Large spinach leaves without holes.
It should be noted that the spinach I used is from my small harvest I have at home.
- Seasonings such as: chili peppers, onion, Spanish celery and garlic.
I love to buy chili peppers of different colors and even more if they are spicy. I find that it gives an exquisite and special touch to every meal.
The way to prepare it is very simple:
Chop all the seasonings and the sprig of celery spain.
The spinach leaves should be cleaned very well and carefully so that they do not break, although these leaves are quite thick, they should also slice the vein in the middle without holes to make it easier when it comes to enrrollar.
Cover with the spinach leaves the ugliest, smallest or with holes the cauldron where it is going to be cooked.
Wash the ground meat, squeeze it and place it in a bowl, when all the meat is ready add the kilo of rice, the chopped seasonings and mix with your hands.
To the mixture add lemon juice, salt and vinegar to taste.
Particularly, I used a cube for the mixture, since I hardly use salt in my meals.
The way to make the rolls:
Take the leaf and add two spoonfuls horizontally, centered and by the widest part of the leaf.
From there start to roll, tightly until you reach the tip.
Then the corners are folded and the doubles are placed down the cauldron and so on to do with the others that are next to each other and tight.
- After finishing with the rolls, cover with water and put the lid on.
"I suggest using two lids, one smaller and the other smaller, this should be done to prevent the enrrollados from falling apart when they start to boil".
