Today was a very special day for me, So today I happily cooked chicken biryani at my home. কিভাবে আমি বাসায় স্পেশাল চিকেন বিরানি তৈরি করলাম.
আজকে আমার জন্য দিনটা অনেক স্পেশাল ছিল , তাই আজকে আমি খুশি হয়ে আমার বাসায় চিকেন বিরিয়ানী রান্না করলাম। চিকেন বিরিয়ানী আমার এবং আমার পরিবারের সবার অনেক পছন্দ , চিকেন বিরিয়ানি প্রতিদিন খাওয়া যায় না ,যে কোনো একটা স্পেশাল দিনে তৈরী করা হয় , আজকে আমার জন্য দিনটা স্পেশাল ছিল , তাই আজ আমি বিরিয়ানি রান্না করে পরিবারের সকলে একসাথে খেলাম , আপনারা অনেকেই বিরিয়ানি অনেক পছন্দ করেন , কিন্তু বাসায় রান্না করতে পারেন না ,আমি আজকে দেখাবো আপনারা কি ভাবে বাসায় চিকেন বিরিয়ানি রান্না করবেন , আমার রান্না করা চিকেন বিরিয়ানী অনেক সুস্বাধু হয়েছে , আশাকরি আপনারদের কাছেও অনেক ভালো লাগবে , যাইহোক চলুন কথা না বাড়িয়ে শুরু করি , কি ভাবে চিকেন বিরিয়ানি রান্না করলাম।

প্রথমে আমি চিকেন তরকারি রান্না করবো , চিকেন কারী রান্না করার জন্য আমি চিকেন টুকরো করে কেটে ভালো করে পানি দিয়ে পরিষ্কার করে নিলাম , একটি পাত্রে রেখে দিলাম।

এগুলো হলো পটেটো , চিকেন বিরিয়ানি রান্না করলে পটেটো লাগবে , পটেটো তরকারির স্বাদ বৃদ্ধি করে।
Here I have made ginger paste garlic paste cumin paste.
এখানে আমি তৈরী করে নিয়েছি আদা পেস্ট রসুন পেস্ট জিরা পেস্ট।
Here I made cardamom paste, cinnamon paste, hot spice paste.
এখানে আমি তৈরী করে নিলাম এলাচি পেস্ট ,দারুচিনি পেস্ট , গরম মশলা পেস্ট .
There are onion pieces, tomato pieces and green chillies.
এখানে রয়েছে পেঁয়াজ কুচি , টমেটো টুকরো ও কাঁচামরিচ।
I will lightly fry the onion pieces in hot oil.
পেঁয়াজ কুচি গুলো গরম তেলের মধ্যে ছেড়ে আমি হালকা ভেজে নিবো।
When the onion pieces are lightly fried, I will leave the tomato pieces and green chillies.
পেঁয়াজ কুচি গুলো হালকা ভাজা হয়ে গেলে টমেটো টুকরো ও কাঁচামরিচ ছেড়ে দিবো।
When the onion pieces are lightly fried, I will leave the tomato pieces and green chillies and all the prepared spices and mix well, add the same amount of salt along with the spices, After cooking for a while, I will leave the chicken pieces, and continue to cook.
পেঁয়াজ কুচি গুলো হালকা ভাজা হয়ে গেলে টমেটো টুকরো ও কাঁচামরিচ এবং তৈরী করা সকল মসলা ছেড়ে দিবো এবং ভালো করে মিক্স করে নিবো , মসলার সাথে পরিমান মতো লবন দিতে হবে ,কিছুক্ষন রান্না করার পর চিকেন টুকরো গুলো ছেড়ে দিবো , এবং রান্না করতে থাকবো।
After cooking for a while, it will take on a wonderful color and the aroma will come out.
কিছুক্ষণের মধ্যে রান্না করা হয়ে গেলে অসাধারণ রং ধারণ করবে এবং সুঘ্রাণ বের হবে , রান্না করার পর আপনি লবল টেস্ট করে নিবেন।
Now I'll start cooking polao, Here I took my amount of polao rice, And I cleaned it well with water.
এখন আমি শুরু করবো পোলাও রান্না করা , এখানে আমি আমার পরিমান মতো পোলাও চাল নিলাম , এবং ভালো করে পানি দিয়ে পরিষ্কার করে নিলাম।
Now I'll heat the oil in a pot and grate the onion, And I will give up cardamom and bay leaves.
এখন আমি একটি পাত্রে তেল গরম করে পেঁয়াজ কুচি দিয়ে দিবো, এবং এলাচি ও তেজপাতা ছেড়ে দিবো।
I will leave the rice in the pot with enough water, after cooking it a little, I will actually shake it.
পরিমাণমতো পানি দিয়ে চালগুলো পাত্রে ছেড়ে দেবো , কিছুটা রান্না হয়ে আসলে নেড়ে দিবো।
After cooking for a while, it will become polao in a very nice way, Many beautiful scents will spread.
কিছুক্ষণ রান্না করার পর অনেক সুন্দর ভাবে পোলাও হয়ে আসবে , অনেক সুন্দর ঘ্রান ছড়িয়ে যাবে।
Now I will mix the cooked chicken curry well with polao, This should be done with light hands so that the polao does not become soft.
এখন আমি রান্না করা চিকেন তরকারি পোলাও সাথে ভালো করে মিক্স করে নেবো ,হালকা হাতে এই কাজটি করতে হবে যাতে পোলাও নরম হয়ে না যায়।
Mix well again after a while and cook over low heat, Once mixed, it will have a very nice color, and the smell of chicken biryani will spread, Then you will want to eat a lot, But then you can’t eat, because everyone in your family is sitting with a plate in hand for this chicken biryani meal .
মিক্স করে আবার একটু পর ভালো করে মিক্স করতে হবে এবং হালকা তাপ দিয়ে রান্না করতে হবে , কিছুক্ষন মধ্যে মিক্স হয়ে গেলে অনেক সুন্দর একটি রং ধারণ করবে , এবং চিকেন বিরিয়ানি ঘ্রান ছড়িয়ে যাবে ,তখনি আপনার খেতে অনেক ইচ্ছা করবে , কিন্তু তখন আপনি খেতে পারবেন না , কারণ এই চিকেন বিরিয়ানি খাবার জন্য আপনার পরিবারের সবাই প্লেট হাতে নিয়ে বসে আছে।
The chicken biryani is cooked, Now my other favorite food is tomato salad, I don't like anything but salad, Now I took tomato green pepper and coriander leaves to make the salad.
চিকেন বিরিয়ানি রান্না করা হয়ে গেছে , এখন আমার আরেকটি প্রিয় খাবার টমেটো সালাদ ,
সালাদ ছাড়া আমার কোনোকিছুই ভালো লাগে না , এখন আমি সালাদ তৈরী করার জন্য টমেটো কাঁচামরিচ ও ধনিয়া পাতা নিয়ে নিলাম।
I chopped everything and mixed it with salt to make my favorite tomato salad.
সবকিছু কুচি করে কেটে সাথে লবণ মিক্স করে তৈরি করে নিলাম আমার পছন্দের টমেটো সালাদ।
