Today I cooked some vegetables with fish. I’m not professional in cooking fish but it turned out great. My family liked it.
We bought freshly caught fish yesterday. The fisherman had mahi-mahi for sale, and it was great. That’s what exactly I wanted to try.
Ingredients
Mahi-mahi fillet - about 2 lb
Russet potatoes - 5
Sweet potatoes - 2
Zucchini- 2
Asparagus - half of pack
Garlic - 2 cloves
Lemon juice
Olive oil
Butter - 1 Tbsp
Milk - 2 Tbsp
Salt, black pepper, smoked paprika to taste
Preparation
So I don’t bake or roast that often, so any step I was doing is adjustable, there is no strict rule.
- First I heated up the oven up to 400F. While it was heating, I washed the veggies, peeled sweet potatoes, and cut them along with the zucchini. When the oven was ready I put my veggies on the baking sheet, added salt, black pepper, and drizzled with olive oil. I timed for about 15 minutes, but I kept checking with the fork from time to time.
- While the veggies were roasting I peeled russet potatoes, rinsed and chopped them and put them in the pot with water to boil. I usually time for 15-20 minutes after it starts boiling.
- After potatoes are cooked, I add a tablespoon of butter and a few tablespoons of milk and then mash it. You can add a bit more butter and milk, if like more creamier texture.
- Here I took out my veggies. They are done.
I put them in a different container, because now I will put fish and asparagus on the baking sheet. It’s too small to fit everything at once.
- Now I put fish and asparagus, season with salt and pepper, add paprika and garlic to the fish, and drizzle some olive oil. I put it in the oven for 25-30 minutes. Check after about 25 minutes if it’s need more time.
- After it was flaking off easily the fish was ready. I broke it into portions.
- Here are the vegetables waiting to be served.
- I put a little bit of everything on the plate. Not sure if anything is missing… Oh yes, I squeezed fresh lemon juice on my fish.
