Two-Color Porridge

A traditional Indonesian dish that symbolizes good hopes.

Do you have a family tradition during a naming ceremony for a child? In our family, the Javanese, we have a tradition of making two-color porridge as a symbol of good hopes when a child is named.

This two-color porridge is actually called Red and White Porridge because one of the colors of the porridge is made from brown sugar ingredient. Brown sugar in Indonesia is called red sugar. That's why this porridge is called red and white. But to avoid confusion, I just named this porridge two-color porridge.

Although in the original tradition, this porridge is made at a naming ceremony for a newborn child, of course we can make and enjoy this porridge on ordinary days in general.

Because my mother-in-law really likes this porridge, so this weekend I made a recipe for my mother-in-law. Actually, the method for making this two-color porridge is quite simple and we only need to be careful so that the main ingredients don't burn when cooked. So, stay tuned for more!




THE INGREDIENTS

  • 1 cup of rice
  • 2 liters of water
  • 2 pandan leaves
  • 1 tsp of salt
  • 70 ml of thick coconut milk
  • 100 grams of brown sugar



Cooking Instructions

Wash the rice three to four times until the water is no longer cloudy.

In a cooking pot, add the washed rice, along with 2 liters of water. Also add the pandan leaves and 1 tsp of salt. Stir well, cook until the water reduces.

Occasionally stir the rice, the more the water reduces, the more we have to stir the rice so that they do not burn on the bottom of the pan.

Cook until the water looks almost gone and the size of the rice has changed to be bigger and the texture of the rice becomes soft.

When the texture of the rice has changed to soft, add 70 ml of thick coconut milk. Stir continuously.

Cook the mixture of rice and coconut milk until they look like they are combined and the rice becomes softer than before. The surface of the mixture has also bubbled. Be careful not to splash the mixture on your hands or face.

Prepare a container, then take some of the white dough, and set aside.

We will cook the rest of the mixture again. Add the thinly sliced ​​brown sugar.

Stir well until the brown sugar melts and no more lumps are visible. The porridge mixture will be reddish brown. Then lift and serve.

The special thing about this porridge is its presentation. Add the brown sugar porridge first. Then, on the top layer, add the coconut milk porridge.

The combination of this porridge is savory and sweet. The savory taste comes from the white porridge layer made from coconut milk ingredients. Also, the sweet taste comes from the reddish brown porridge layer made from brown sugar ingredients.

With only 1 cup of rice, I can make many dishes that can be enjoyed by one family. I am happy that my mother-in-law can eat my porridge with gusto. I love serving people with cooking. ❤️
