Delightful Overripe Banana Cakes

Giving overripe bananas a second chance to become delightful cakes for the family.

It would be very hard not to think of banana cakes when we have overripe bananas at home. So did I. The first thing I thought of when I had overripe bananas was to make super yummy and delightful banana cakes.

I was surprised when my husband brought home a lot of overripe bananas from my mother-in-law's house. My mother-in-law told me to turn all the overripe bananas into delicious foods. So, no overripe bananas were wasted.

My mother-in-law and my sisters-in-law love banana cakes. So, I will make banana cakes from those overripe bananas. I will also make traditional cakes later from the remaining bananas because I only need a few overripe bananas to make banana cakes.

This time I only need 4 overripe bananas. Actually, see that overripe bananas are not as bad as their outer appearance. Although the outer skin of those overripe bananas looks black but the inside of the bananas is still a good yellow. It is also possible that this is influenced by the type of banana I used so that it affects the durability of the inside of the banana flesh.




THE INGREDIENTS

  • 4 overripe bananas or about 200-250 grams
  • 120 grams of sugar
  • 150 grams of all-purpose flour
  • 3 eggs
  • 1/2 tsp of SP
  • 1/2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/4 tsp of salt
  • 1 tsp of vanilla
  • 120 ml of vegetable oil
  • Optional: 1/4 cup of chocolate chips



COOKING Instructions

PREPARE OVERRIPE BANANAS

Peel the overripe bananas. Transfer into a bowl.

Using the bottom of the glass, try to mash overripe bananas until smooth. Then set aside.



PREPARE THE EGG DOUGH

In a large bowl, add 3 eggs with sugar also with vanilla and SP.

Using an electric mixer, beat the eggs until the dough expands into a pale white color. About 5-7 minutes on high speed.



ADD MASHED BANANAS

Prepare a spatula. Then, add mashed bananas to egg mixture. Just use a spatula with a technique of stirring back slowly but do not overdo it to avoid the texture of the cake later becoming hard.



ADD FLOUR MIXTURE

In a container, mix the dry ingredients: flour, baking powder, baking soda and also salt.

Then use a strainer on top of the egg and banana mixture to add the flour mixture.

Mix them evenly using a spatula with the same technique as before. Do not stir excessively.



ADD VEGETABLE OIL

After mixing the egg mixture with flour mixture, then add vegetable oil and using a spatula mix them well and carefully.



ADD CHOCOCHIPS

Add chocochips then don't forget to preheat the oven at 180 degrees Celsius.



PREPARE BAKING TRAY

Transfer the mixture to a baking tray. If you don't have baking paper, you can grease a baking tray with butter or just oil to prevent them from sticking. It also makes it easier to remove the cakes from the tray later.



BAKE CAKES

Bake cakes at 180 degrees Celsius for 30 minutes, then continue with the last 15 minutes at 160 degrees Celsius.


SERVING WAYS

Before serving, wait for the cakes to cool down to room temperature. Then you can start cutting them according to your taste.
