Pura vida! Costa Rican Chifrijo as our first meal of the year

We're in the process of making a simple, yet delicious dish from the land of the sloth, Costa Rica! Which is where @pamarias was born. It's not a fancy dish by any means. They actually serve it at bars as a late night snack, but I absolutely love it, so I asked to make some today.

I give you the Tico Chifrijo!

This dish takes about 1 hour to make.

We'll start with some white rice, which usually fried, uncooked with garlic and onion for about 30 seconds. After that, you add a pinch of salt and two parts water. Let it cook for about 20 minutes or until all the water has evaporated. You can also use a rice cooker, but we just got used to making it this way.

While we wait for the rice, we put some canned red beans on the fire with garlic. we don't own a crock pot yet, but we already discussed adding one to our kitchen this or the next month. Making beans from from scratch in a slow cooker just makes it more delicious.

While the rice and beans are on the fire, I'm on pepper duty.

These little guys are chiltepe peppers.

I'm going to de-stem them and prepare a hot pepper sauce by muddling them and adding some lime juice, olive oil, onion and cilantro.

While that is going on, @pamarias is chopping up some delicious pork loin, which is incredibly soft and lean. This will be the main protein in our dish.

When the rice and beans are ready, you can put them in a bowl, like this.


The toppings are also ready.

We have my awesome sauce chiltepe pepper dressing, some pork rinds and pico de gallo. All we need is to add some fresh avocado and your Chifrijo is ready to be served.
