Easy and Delicious Chicken "Claypot" Rice Cooker Recipe

Hello Foodies Bee Hive Community! As a proud Singaporean and a passionate food lover, I have always had a deep appreciation for homecooked meals. Growing up, my mum cooked delicious dishes for our family every day, instilling in me a love for traditional flavors and comforting dishes.

Despite the wide variety of dining options in Singapore, I often find myself craving the simple pleasures of a homemade meal. That's why, whenever I have the time, I enjoy whipping up dishes in my own kitchen. Today, I'm excited to share with you a fuss-free recipe that I absolutely adore—Chicken "Claypot" Rice Cooker! 😋


Ingredients:

  • Oyster Mushrooms
  • Mini Chinese Shitake Mushrooms (冬菇)
  • Chinese Sausage
  • Boneless Chicken Thigh Meat
  • Spring Onions
  • Dark Soya Sauce, Oyster Sauce
  • Sesame Oil
  • Chinese Wine
  • Salt, Pepper, Sugar

Start by dicing up the Oyster Mushrooms, Chinese Shitake Mushrooms, Boneless Chicken Thigh Meat, and Spring Onions into smaller pieces.

Marinate 150g to 200g of Chopped Chicken Pieces with 1 tsp Dark Soya Sauce, 1 tsp Chinese Wine, 1 tsp Sesame Oil, 0.5 tsp Salt, 1 tbsp Corn Flour, and some White Pepper.

Soak 1 cup of Jasmine White Rice in water for half an hour before draining them. Add the drained Jasmine White Rice into the rice cooker pot. Then, place the Marinated Chicken on one side of the rice cooker. On the other side, add the Chinese Sausage and Chopped Mushrooms. Pour about 220ml of Water into the rice cooker pot. For extra flavor, you can use the liquid that was used to soak the Chinese Shitake Mushrooms, and top it up with drinking water to reach the desired amount (220ml).

Place the rice cooker pot into the rice cooker and set it to normal rice cooking mode. Allow the ingredients to cook together. While waiting, prepare the sauce by mixing 1 tbsp Dark Soya Sauce, 1 tbsp Oyster Sauce, 1 tbsp Sugar, 1 tbsp Sesame Oil, and 4 tbsp Water in a separate bowl.

Once the rice is fully cooked, open the lid and remove the Chinese Sausage. Remove the outer skin from the Chinese Sausage before cutting it into thin diagonal slices. Once sliced, return the pieces of Chinese Sausage back into the rice cooker pot.

Garnish the cooked rice with the Chopped Spring Onions and drizzle a few teaspoons of the prepared sauce. Mix everything together using a spatula. Taste the rice and adjust the flavor by adding more sauce if desired.


Finally, spoon the flavorful rice into serving bowls and enjoy the delightful combination of Smooth and Aromatic Chicken, Chewy Mushrooms, Savory Sausage, and Fragrant Jasmine Rice!
