When we become parents one of the aspects we take care of the most is feeding our kids, but from time to time it is not bad to take a break and indulge them with their favorite dishes.
In my house from a very young age our eating habits were modified due to my father's health reasons, as well as some medical conditions to which we are predisposed thanks to genetics. So I consider that we had a fairly balanced diet and in which the intake of fats was very controlled.
At home fried and fatty foods were rare, in fact today my mom maintains the same care with her diet and in my particular case, at home, from time to time we make some exceptions and we treat ourselves by eating something that we all enjoy and one of the things that we always lean towards at home when it comes to choosing our guilty pleasure of the month is fried chicken!
It is very hard to resist a chicken that is golden brown and crispy on the outside and juicy and soft on the inside. That combination of textures and the unbeatable flavor of a good breading make it one of our favorites and as it is almost always our dish of exception we try to vary its accompaniments, so this time I bring you a crispy chicken with breaded eggplants and rice with beets.
As usual, I bring you a simple recipe, with few ingredients and super tasty! And although it is not the healthiest of all is something we do not eat regularly at home, so I apply what they say "once in a while does not hurt ".
The ingredients are usually things we have and in this opportunity for our crispy chicken recipe, we obviously need chicken, you can use your favorite pieces without problems and for the breading, the only difference is that we changed the bread crumbs for precooked corn flour because I love how crunchy they are.
And for the side dishes, although I made my rice with beets you can add any vegetable of your preference and that you have at home because the idea is that you don't have to incur in extra expenses and finally the eggplants which is another of my favorite vegetables.
So with that said, I leave you the list of ingredients with their quantities.
As you can notice there are really very few ingredients and as I say you can vary what you want according to what you have at home and of course according to your tastes.
The preparation is really simple, just follow the normal steps for a breading; egg - flour - egg - bread. In my case I am not using bread crumbs and the order to coat the chicken is flour - egg - corn flour because this way the breading is not so thick.
As for the preparation of the rice and the eggplants it is even simpler, so there is no way to get lost in the recipe with this step by step!
Prepare the breading station (flour - egg - corn flour) adding salt to each ingredient arranged, adding to the corn flour oregano powder or any seasoning of your preference.
Dredge the chicken in the wheat flour
Then dip in the egg
Place the chicken in the container containing the cornmeal, cover and shake vigorously.
Repeat the procedure with all chicken pieces.
Fry the pieces over medium heat in abundant oil until golden brown.
Bring water to a boil and once it breaks the boil add salt, finely chopped beets (you can also grate it) and rice. Lower the flame to the minimum, cover and let it cook until the liquid evaporates completely.
Cut into thin wheels
Dredge in wheat flour with oregano powder
Fry over high heat until golden brown.
Serve and taste!
As you can see it is another fairly easy recipe to prepare, without great complications and although it takes some time to cook the chicken, it is well worth it, especially because it is not a dish for every day, so it is best to prepare it on a day when we have enough time, both to cook and to taste it.

Cuando nos convertimos en padres uno de los aspectos que más cuidamos es la alimentación de nuestros peques, pero de vez en cuando no está mal hacer un alto y conplacerlos con sus platillos favoritos.
En mi casa desde muy pequeña nuestros hábitos alimenticios fueron modificados por razones de salud de mi padre, así como por algunas condiciones médicas a las que tenemos predisposición gracias a la genética. Por lo que considero que tuvimos una alimentación bastante balanceada y en la cual se controlaba mucho la ingesta de grasas.
En casa eran poco frecuentes las frituras y comidas grasosas, de hecho hoy día mi mamá mantiene el mismo cuidado con su alimentación y en mi caso particular, en casa, de vez en cuando hacemos algunas excepciones y nos damos un gusto comiendo algo que todos disfrutamos y una de las cosas por las que siempre nos inclinamos en casa a la hora de escoger nuestro placer culposo del mes es el pollo frito!
Y es que es muy difícil resistirse a un pollo doradito y crujiente por fuera y jugosito y suavecito por dentro. Esa combinación de texturas y el sabor insuperable de un buen empanizado lo convierten en uno de nuestros favoritos y como es casi siempre nuestro platillo de excepción tratamos de variar sus acompañantes, así que en ésta oportunidad les traigo un pollo crujiente con berenjenas empanizadas y arroz con remolacha.
Como de costumbre, les traigo una receta sencilla, con pocos ingredientes y súper rica! Y aunque no es la más saludable de todas es algo que no comemos con regularidad en casa, así que me aplico aquello que dice "de vez en cuando no hace daño".
Los ingredientes generalmente son cosas que tenemos y en esta oportunidad para nuestra receta de pollo crujiente, necesitamos obviamente pollo, de éste pueden usar sus piezas favoritas sin problemas y para el empanizado, lo único diferente es que cambiamos las migas de pan por harina de maiz precocido porque me encanta lo crujiente que quedan.
Y para los acompañantes, aunque yo hice mi arroz con remolacha ustedes pueden agregarle cualquier vegetal de su preferencia y que tenga en casa pues la idea es que no tengan que incurrir en gastos extras y finalmente las berenjenas que es otro de mis vegetales favoritos.
Así que dicho ésto, les dejo el listado de ingredientes con sus cantidades.
Como pueden notar realmente son muy pocos ingredientes y como les digo pueden variar lo que deseen según lo que tengan en casa y por supuesto de acuerdo a sus gustos.
La preparación es realmente sencilla, sólo hay que seguir los pasos normales para un empanizado; huevo - harina - huevo - pan. En mi caso yo no estoy usando migas de pan y el orden para cubrir el pollo; es harina - huevo - harina de maiz porque de esta forma no me queda tan grueso el empanado.
En cuanto a la preparación del arroz y las berenjenas es más sencillo aún, así que no hay manera de perderse en la receta con éste paso a paso!
Preparar la estación de empanizado (harina - huevo - harina de maíz) agregando sal a cada ingrediente dispuesto, adicionando a la harina de maiz orégano en polvo o cualquier condimento de su preferencia.
Pasar el pollo por la harina de trigo
Luego sumergir en el huevo
Colocar el pollo en el envase que contiene la harina de maiz, tapar y agitar enérgicamente.
Repetir el procedimiento con todas las piezas de pollo.
Freír a fuego medio en abundante aceite las piezas hasta dorar.
Poner a hervir el agua y una vez rompa el hervor agregar sal, la remolacha cortada finamente (también la pueden rallar) y el arroz. Bajar la llama al mínimo, tapar y dejar cocinar hasta que el líquido se evapore por completo
Cortar en ruedas delgadas
Pasar por harina de trigo con oregano en polvo
Freír a fuego alto hasta dorar
Servir y degustar!
Como ven es otra receta bastante fácil de preparar, sin grandes complicaciones y aunque toma algo de tiempo la cocción del pollo, bien vale la pena, sobre todo porque no es un platillo para todos los días, por lo que lo más conveniente es prepararla en un día en que tengamos suficiente tiempo, tanto para cocinar como para degustarlo.
