Espero puedan prepararla y disfrutarla.

Hello friends of HIVE FOOD, I hope you are enjoying a great day, in my house we are lovers of cakes, when I decide to cook one does not last more than 48 hrs no matter how big it is, a few weeks ago my husband was helping my compadre @guilletona to clean the yard and they found some beautiful auyamas, my husband brought one home and threw me the hint, Guillermo said that if you made cake send him, I said ok. I put the auyama in the month and weeks went by, it was green and as the days went by it became more beautiful orange, yesterday I decided to prepare the cake and freeze the rest for a cream with milk that I also love.
My recipe for pumpkin cake has few ingredients, its appearance is like cheese, everyone really loves it even my mom who does not eat pumpkin, the good thing about this cake is that it is really economical and is the perfect dessert to accompany any special meal, recently it occurred to me that you can decorate it with cream on top, of course you must make sure that the cream is not too sweet so it does not become cloying. Here is the recipe I hope you enjoy it.
Ingredients
- 1 kg of pumpkin
- 1.5 cups of wheat flour
- 1.5 cups of sugar
- 1/2 cup of powdered milk or 1 cup of milk
- 2 teaspoons vanilla essence
- 1 pinch of salt
For the caramel
- 2 tablespoons of water
- 5 tablespoons sugar
Preparation
1 Clean the pumpkin, remove the central part of the seed, peel it, cut it in pieces and place it in a pot with water that covers it, take it to the fire until it is soft.
2 When it is soft, turn off the fire, strain the pieces of pumpkin and let it drain until it is cold.
3 Crush the pumpkin completely, I do it in the blender with great care not to force the appliance, add the sugar, salt, milk and vanilla, mix well and add the flour, at this point you can rectify the flavor, if you like you can add a little more milk or sugar according to your preference.ablespoons of sugar.
4 The mixture should have a pasty and sweet consistency.
5 Prepare the caramel in a mold, placing the sugar and water on the heat until it forms and acquires an amber color. Without letting it burn, spread it all over the walls of the mold.
6 Once the caramel is cold, add the mixture and bake in the oven at 180 degrees for approximately one hour or a little longer. The knife test does NOT work because the mixture tends to be sticky and soils the knife, but if when you taste the mixture you do not feel raw flour and the center is not liquid, it is ready.
7 Remove from the oven and let stand in the mold, after about 30 minutes we can unmold, take to the refrigerator for at least 30 minutes, consume cold.
I like to eat it the next day, I feel that the flavors take hold, but at home we hardly wait 30 minutes, at the end of the day we share it at dinner. We should not wait for a special date to share a meal, we should make every moment special, this is my dad's favorite cake, when I take it home he hides it so as not to share it with anyone. I hope you can prepare it and enjoy it.
