¡Feliz día amigos de Hive Food! Espero que se encuentren muy bien y estén pasando estos días navideños de lo mejor compartiendo en familia y comiendo rico. Hace poco les había comentado que este año hice por primera vez hallacas en mi casa e incluyo ya les compartí la preparación de mi primer guiso y es por ello que hoy quiero compartirles ahora la preparación de mis hallacas, las cuales por cierto quedaron muy buenas. Por supuesto cada quien tiene su manera de hacer las hallacas, en todo el país hay diferentes formas de hacerlas y hasta los ingredientes varían mucho y con esta receta que les traigo hoy no quiero decir que sea la manera correcta de hacerlas sino más bien mi manera de prepararlas y espero que les guste, ahora sin más, ¡vamos a cocinar!

I had recently told you that this year I made hallacas for the first time at home and I already shared with you the preparation of my first stew and that is why today I want to share with you now the preparation of my hallacas, which by the way turned out very good. Of course everyone has their own way of making hallacas, throughout the country there are different ways of making them and even the ingredients vary a lot and with this recipe that I bring you today I do not want to say that it is the correct way to make them but rather my way. to prepare them and I hope you like it, now without further ado, let's cook!
• Guiso para hallacas.
• 2 Kg de harina de maíz amarilla.
• 3 Zanahorias grandes.
• 3 Papas grandes.
• 1 Pimentón rojo grande.
• 250 gr de aceitunas.
• 250 gr de pasas.
• Aceite onotado.
• 8 Huevos.
• 1 Pabilo.
• Stew for hallacas.
• 2 Kg of yellow corn flour.
• 3 large carrots.
• 3 large potatoes.
• 1 large red pepper.
• 250 gr of olives.
• 250 g of raisins.
• Onoted oil.
• 8 Eggs.
• 1 Pabilo.
◉ PASO 1. Por supuesto lo primer es tener el guiso listo, lo cual hicimos un día antes de hacer las hallacas para poder dedicar un día solo para estas.
◉ STEP 1. Of course the first thing is to have the stew ready, which we did a day before making the hallacas so we could dedicate a day just for them.
◉ PASO 2.Lo siguiente que hice fue lavar muy bien las hojas de plátano por ambos lados y secarlas muy bien. Luego preparé suficiente masa con harina de maíz amarilla y la dejé reposar para que se hidratara.
◉ STEP 2.The next thing I did was wash the banana leaves very well on both sides and dry them very well. Then I prepared enough dough with yellow corn flour and let it rest to hydrate.
◉ PASO 3. Seguidamente pelé las papas y las zanahorias, luego las llevé a una olla grande con abundante agua y dejé cocinar hasta que ablandaran, al mismo tiempo incluí los huevos pero estos los dejé menos tiempo para evitar que se sobrecocieran. Una vez que las papas, las zanahorias y los huevos estuvieran listos procedí a cortar todo en rodajas finas, también corté el pimentón en tiras finas y reservé todo en una bandeja grande.
◉ STEP 3. Next I peeled the potatoes and carrots, then I took them to a large pot with plenty of water and let them cook until they softened, at the same time I included the eggs but I left them for less time to prevent them from overcooking . Once the potatoes, carrots and eggs were ready, I proceeded to cut everything into thin slices, I also cut the paprika into thin strips and reserved everything on a large tray.
◉ PASO 4. Para preparar el aceite onotado coloqué una olla a fuego bajo, añadí dos tazas de aceite e incorporé un sobre de semillas de onoto y mezclé constantemente hasta que el aceite se calentara y se pintara con el onoto sin dejar que el aceite hirviera, luego retiré del fuego y colé el aceite para retirar las semillas de onoto.
◉ STEP 4. To prepare the onoto oil, I placed a pot over low heat, added two cups of oil and added an envelope of onoto seeds and mixed constantly until the oil was heated and painted with the onoto without leaving any residue. Let the oil boil, then I removed it from the heat and strained the oil to remove the onoto seeds.
◉ PASO 5. Ya teniendo todo listo coloqué todos los ingredientes en la mesa para comenzar a preparar las hallacas.
◉ STEP 5. Having everything ready, I placed all the ingredients on the table to start preparing the hallacas.
◉ PASO 6. Lo primero fue extender una hoja de plátano, tomé una porción de masa y la mojé en aceite onotado para luego aceitar la hoja con esta, luego extendí la masa en la hoja.
◉ STEP 6. The first thing was to spread a banana leaf, I took a portion of dough and dipped it in oil and then oiled the leaf with it, then I spread the dough on the leaf.
◉ PASO 7. Para el relleno agregué una buena porción de guiso, luego agregué los demás ingredientes (papa, zanahoria, pimentón, huevo, aceitunas y pasas), una de cada una a excepción de las pasas que me gusta colocarle varias.
◉ STEP 7. For the filling I added a good portion of stew, then I added the other ingredients (potato, carrot, paprika, egg, olives and raisins), one of each except for the raisins that I like to add several.
◉ PASO 8. Cerré la hallaca uniendo la masa y para ello doblé la hoja de plátano de un lado y luego del otro, seguidamente corté y retiré el exceso de masa de los otros extremos.
◉ STEP 8. I closed the hallaca by joining the dough and to do this I folded the banana leaf on one side and then on the other, then I cut and removed the excess dough from the other ends.
◉ PASO 9. Ya por ultimo envolví l hallaca por completo en la hoja de plátano y la amarré con pabilo.
◉ STEP 9. Finally, I wrapped the hallaca completely in the banana leaf and tied it with wick.
◉ PASO 10. Una vez listas todas las hallacas coloqué una olla grande con suficiente agua y cociné todas las hallacas por al menos una hora, luego las retiré del agua, las dejé escurrir y cuando se enfriaron a temperatura ambiente las llevé al congelador para conservarlas.
◉ STEP 10. Once all the hallacas were ready, I placed a large pot with enough water and cooked all the hallacas for at least an hour, then I removed them from the water, let them drain and when they cooled to room temperature I took them to the freezer to preserve them.
¡Y listo! De esta manera fue como preparé mis primeras y deliciosas hallacas para navidad, demás está decir que estoy feliz con el resultado, por supuesto estaba nerviosa porque es mi primera vez haciéndolas sola pero salieron bien y quedaron deliciosas, hice un total de 58 hallacas, más de lo que esperaba y para mí son suficientes para comer durante este mes e incluso he regalado varias. ¿Qué les ha parecido a ustedes?
