Munggo beans is one of the favorite Filipino food. It has different kinds of cooked beans with a variety of ingredients with vegetables, meat and more. The beans are also included in bread and HOPIA is known here. At the same time comes TOGUE or BEANS SPROUT.
And last night I cooked and the ingredients are the pineapple leaf and pork with sorghum flakes or smoked fish.
INGREDIENTS
3/4 cup munggo, washed
6 cups water
2 tbsp cooking oil
1/2 cup sliced liempo
4 cloves garlic, minced
1 pc medium onion, chopped
1 pc tomato, chopped
1/4 cup flaked tinapa
1/2 cup sili or ampalaya leaves
DIRECTIONS
Simmer monggo in water while covered for 30 minutes.
Sauté liempo until skin is crispy. Add garlic, onion and tomato and cook for 2 minutes.
Add sautéed mixture to pot of simmering mpnggo and continue to cook until tender
Add flaked tinapa, season with salt and add sili or ampalaya leaves.
Serve.
And since there is a lump of beans I decided to make MUNGGO or BEAN SPROUT.
All you have to do is put it into a plastic container pour some water and leave for all night.
Then after that when there is a root out of the beans, remove the water and put on wet paper
Then pour some water everytime it gets dry.
For 3days to 4days you will have your FRESH BEANS SPROUT.
