2 pork loin
80 grams of prunes.
1/2 Half apple, peeled and chopped.
150 grams of lean ground pork.
1 egg.
The crumb of a slice of bread mold, soaked in milk.
6 Tablespoons of olive oil.
Flour.
1 glass of sherry.
1 Tablespoon of cream of milk.
Salt, ground pepper.

Open the loins in the longitudinal direction, and flatten them. Soak the plums in the sherry for 30 minutes.

Beat the egg and mix it with the ground meat, the apple, the plums, the bread crumbs, salt and pepper. Place the mixture in one of the loins and cover it with the other, tying them tight so that they do not lose the filling.

Enharinelos, brown in a pan with the oil and cook until they are done inside. Remove them, leave 3 tablespoons of oil in the pan, add the cream, salt, pepper and stir.

And ready!! We serve the meat in slices with its sauce.
