Dragon fruits has many health benefits including ability to lower cholesterol, boost energy and fight bacterias just to name a few. Not only does it offer these benefits, it is exotic and delicious. The dragon fruit is sometimes know by other name such as "pitaya", this "superfood" is popular in Mexico, South America and other parts of Central America. It is is believed that explorers took the dragon fruit to Southeast Asian nations like Cambodia, Thailand, Vietnam, where it is a big part of their diet. Pitaya comes in two color varieties, either a red or white fleshy interior upon dissection.
I was introduced to pitaya while living in Hawaii, it's available in many supermarkets and I had a coworker who also grew some in her backyard. I have also enjoyed pitayas in a variety of culinary applications as shown below.
