Homemade Healthy Snacks Series - #7 Apple Crumble Flapjack Bites - An Original & Seriously Drool-Worthy Recipe

Sorry to blow my own trumpet but goodness gracious, these are by far my best invention yet!  Super easy, super scrummy, and best of all they're made with nutritious ingredients - so unlike regular flapjack (which is made with syrup & sugar) these are actually good for you!  If you liked my recipe the other day for Apple Crumble Crunch Slices, you're gonna love these even more.  Who doesn't love guilt-free snacks?



What you will need: (Makes about 20)


50g butter

1 tblsp coconut/avocado oil

5 tblsp honey

1 large or 2 small apples

100g wholegrain porridge oats

1 tblsp cinnamon


Method:


In a large bowl, melt the butter and oil together, and stir in the honey



Peel, core and grate the apple(s), then add to the bowl and mix with a spoon



Add the cinnamon and oats, and mix it all up well



In your hands squeeze excess moisture out of the mixture as you shape into balls, and place onto an un-greased baking tray



Pop into a preheated oven at 190 degrees Celcius for 20-25 minutes until golden-brown, then allow to cool



Enjoy them fresh out the oven whilst they're still slightly warm, or enjoy them cold - they're delicious either way!
