Moimoi is one of the most delicious meals prepared from beans. It's called beans pudding.
People love their moimoi differently, personally, I love my moimoi to have the peach color, which is why I add the tomato puree, not to worry, I'll carefully explain that in the next few paragraphs.

Ingredients for moi-moi:
• Beans
• Maggi cubes
• Crayfish
• Tatashe(a type of Nigerian pepper)
• Pepper(fresh)
• Nutmeg
• Onions
• Tomato puree
• Vegetable oil
• Water
• Fillings(liver, brisket bone, egg, fish, beef, etc)
• Waterproofs/leaves/plastic plates

Tools:
• Tray
• Basin
• Blending bowl
• Knife
• Blender
• Gas cooker/stove

I didn't include quantity of any of the ingredient, I believe one should use a desired quantity. I may use 10 cups of beans if I'm preparing for my entire family and 2cups if I'm preparing for just me. So the quantity varies. And also, the other ingredients will be according to the quantity of the beans, for instance, a cube of Maggi is enough for 3cups of beans.

Recipe:
• Measure the desired quantity of beans into a tray and select out the chaff and stones. PhotoGrid_1519122989212.jpg
• Soak the selected beans in water, this is done in order to make the bean coat soft for easy removal. PhotoGrid_1519123029673.jpg
• Thereafter, pour the soaked beans into a tray, select the bean coat out of the beans. This will take time, because it has to be done thoroughly. PhotoGrid_1519123052244.jpg
• The beans is now ready for grinding, for me, I use a blender to achieve a smooth paste, I discovered that using a home grinder won't give me that smooth paste. PhotoGrid_1519122608984.jpg
• Blend your pepper, onion, nutmeg and tatashe and add to the beans smoothy/paste.
• Add your tomato puree to the mixture. Tomato puree is a perfect blend of tomatoes, pepper and other spicy ingredients. PhotoGrid_1519122561212.jpg
TOMATO PUREE
• Add your crayfish, Maggi and little salt to taste.
• Add vegetable oil.
• Whisk the mixture together till you achieve a very smooth paste, add a little water to the mixture.PhotoGrid_1519122528122.jpg
• Scoop the mixture into waterproof/leaves/plastic bowl. PhotoGrid_1519122413628.jpg
• Add the fillings to each waterproof/leaves/plastic bowl. Could be Boiled egg, liver, beef etc.
I love using waterproof because the moimoi will be done faster than in a plastic bowl. As a matter of fact I only use plastic bowls when I'm preparing moimoi for guests or for an event.
• Pad the bottom of the pot you want to use for cooking, this is done to prevent your moimoi from burning or gumming to the pot.
• Put a little quantity of water into the pot, then you can put all the wraps of your mixture in the pot.
• Set your pot on fire, under low heat, you don't want some part of your moimoi to be done and the other half undone.
In order to check if the moimoi is done or not, use a knife to pierce through the wraps, if it comes out wet, then it isn't done, if it comes out dry, then it's done. This should be done after 20-30mins, depending on the type of wrap used, and also the cooker used. Stove usually takes longer time, about an hour or thereabout.
I prefer using firewood, as it will get the moimoi done in less than 20minutes.

Your moimoi is ready, serve while still hot. It can be cut into small cubes.
Moimoi is best eaten with jollof rice or any rice at all. Serve along side fruit drink or mineral. PhotoGrid_1519123160637.jpg

Ps: the whole beans process can be skipped if you have beans flour.

You'd agree with me that moimoi is not so hard to prepare after all. Any one can prepare it.
