Garlic Shrimp and Vegetables

This is a delicious shrimp dish that is perfect to make during your next family barbecue. This dish is one of the easiest ways to cook shrimp that you will ever come across.

Makes: 4 Servings
Total Prep Time: 30 Minutes

Ingredients:
• Extra Virgin Olive Oil
• Dash of Salt and Black Pepper
• 3 Cloves of Garlic, grated
• 1 Tsp. of Crushed Red Pepper Flakes
• ¼ Cup of Parsley, fresh, chopped and extra for garnish
• 1 Pound of Shrimp, peeled and deveined
• 2 Onions, peeled and cut into wedges
• 1 Head of Broccoli, cut into florets

Directions:

First heat up the oven to 400 degrees.

  • While the oven is heating up use a small bowl and add half teaspoon of black pepper, ¼ cup of olive oil, a teaspoon of salt and . Add in the grated garlic, crushed red pepper flakes and chopped parsley. Stir well to mix.

  • Add in the shrimp to this mixture and toss well to mix. Set aside to marinate.

  • Use a large baking sheet and add in the chopped onions and broccoli florets. Toss well to mix. Drizzle olive oil over the top and season with a dash of salt and black pepper. Toss again to coat. Spread evenly in a single layer.

  • Place into the oven to roast for 20 minutes.

  • After this time, pour the shrimp and marinade over the vegetables. Toss again to mix. Spread out in a single layer again.

  • Put back to the oven to roast for 5 minutes or until lightly toasted. Serve right away.
