Christmas Pudding Truffles: Chocolate perfection

With Christmas just around the corner now, I've been starting to think of the yummy foods I like to make.

These Christmas Pudding Truffles have been firm hit in my family for years are so easy to make!

To make them, you'll need:

325g Cooked Christmas Pudding
125g Dark Chocolate
40g Icing Sugar
2 tbs Vanilla Extract
2 tbs Golden Syrup or Corn Syrup

To Decorate:

100g White Chocolate
Writing Icing

So, making these is super easy - all you need to do is place everything in a large bowl and give it a good mix together. I do however, prefer to use a foodmixer for this job as it takes all the hard work away.

You'll then end up with a large ball of the mixture which now needs to be put in the fridge to chill down.

I then weight out 20grams and roll them into balls before decorating with some melted white chocolate and writing icing.

Then back in the fridge to set the chocolate, after which, you're all good to enjoy them!
