In many restaurants in Belgium, the best sold dishes are scampi dishes.
“Scampi’s” as we know them are shrimps that are sold frozen without their head. Mostly easy peel, the back is already cut open so you can remove the peel.
Scampi’s are a bit more chewy then regular gambas. And i don’t know why but it’s a product that you cannot find in Spain. Or maybe in some shops you can, but not in Makro/Metro Spain. Like this i haven’t seen them, and in Belgium the freezers are fully loaded with these Scampi’s in every Makro/Metro.
Is it because they have better and fresher gambas of their own, that they just don’t import it? I don’t know...
Anyway, i also have them on the menu. And i make them with creamy curry sauce.
I bake them with some cayennepepper, salt and paprika powder.
For the creamy curry:
I start by frying some onion and apple together with some Madras curry powder. I extinguish with some ricard and white wine. Then i add culinary cream, garlic paste, chicken bouillon paste and some ginger syrup and let it cook.
Fire in the hole!🔥
So in this case i also extinguish my scampi’s with ricard.
I add my curry sauce.
Then i let it cook together for a few minutes.
And actually that’s all. So it’s a very easy dish.
Really easy and people are crazy about it over here so win-win.😄
I finish with some freshly cut chives and spring onion. And since we are in Belgium, this dish is most of the time served with potatoe fries and mayonaise on the side ofcourse.😌
Sounds a bit strange maybe, but it is what it is. I actually really like it a lot too.☺️
