New on the menu, gambas a la plancha.
Plancha sauce is a classic, i think lot’s of chefs have their own recipe for this one.
My recipe is just some fried onions and tomatoes with garlic. I let that cool down. Then i add some salted anchovies, tomato purée, good arbequina olive oil, smoked paprika powder and extra garlic.
Mix it all together and you get a paste.
Then my gambas...
First i cut their mustaches and peel them. I just peel a couple of elements out of their back to make it easier to eat.
Then i put them on my charcoal grill for a few minutes.
Afterwards i put them in a pan and add my plancha sauce.
And that’s all, very easy dish. I serve with a piece of lemon and some freshly cut chives. And maybe some bread to dip the plancha sauce.
