This is a classic food in my home and is served with feta cheese. This time I used
vegetarian feta cheese to adapt to my dietary restrictions; of course you can use regular feta!
Ingredients: 1 kg of big shrimps (as usual, you should clean the shrimps really well and omit the intestine on their backbone), ½ glass of olive oil to fry the shrimps and ½ cup pf olive oil for the cooking, 1 medium onion chopped, 1 cup of white wine, ½ ltr of homemade tomato juice, 1-2 medium tomatoes chopped, 300gr of vegetarian feta cheese, salt and pepper, a pinch of sugar, 1 tbsp of chopped parsley
First step is to fry the shrimps in a frying pan using the ½ glass of olive oil for a few minutes for about 5’ for both sides. Then we spread them on a (glass) tray and start preparing the tomato sauce.
So, onto the second step, we sauté the onions in a pan and put the white wine. We let the alcohol evaporate. We put the tomato juice and the chopped tomatoes. We allow for the water of the tomatoes be absorbed. We add the salt, the pepper and the pinch of sugar. As a final step, we pour the tomato sauce onto the shrimps and put in the oven in 160C for 15’. We take out, sprinkle small pieces of feta cheese and the parsley and re-bake for a few more minutes.
