Tacos, Pokémon & Margaritas

Ah, tacos! Tacos are always great, especially when they’re homemade and so addictive!

I made my low carb meat tacos again over at my friends, and this time they were better than ever! We also doubled the recipe so there was plenty for everyone to get their fill 😋

I think I was able to get 26 tacos out of two pounds of meat, so that was great! I properly cut some iceberg lettuce this time too (good and thin) and for me it really makes the taco good because it gives it the bulk that’s missing from not having the meat inside. It also gives a nice neutral background to the intensity of flavors from the meat, cilantro, onion, lime juice, and hot sauces!

While we ate, we watched classic old Pokémon! We even got to the never released from Japan seizure episode with Polygon, which gets pretty intense with the flashing colored lights! It’s kind of a “fun” challenge to see how long you can watch before having to look away. Last time I couldn’t handle it, but this time it didn’t phase me at all.

To round out the evening we made “redneck margaritas”, which was just ice, bottom shelf tequila, and some diet Mt Dew to keep the carbs down. It was actually pretty good, especially with a little lemon/lime juice and a bit of diet 7Up. There’s nothing like margaritas and tacos! It was a great meal with good friends 😊
