Apple Fritter Cake Recipe

FILLING:
2 apples cored, peeled and diced
1/3 cup sugar
1/4 tsp cinnamon
2 tsp. water
2 Tbsp. cornstarch

SPRINKLE:
1/2 cup brown sugar
1/2 tsp. cinnamon
small pinch freshly grated nutmeg

CAKE:
1/3 cup butter
3/4 cup sugar
2 1/4 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 cup plain greek yogurt (or sour cream)
1/2 cups applesauce
1 tsp. vanilla
2 eggs

GLAZE:
2 cups powdered sugar
1 tsp. vanilla
6 Tbsp. milk

Apple Fillling:
In a saucepan on low heat combine apples, sugar, water, cinnamon and cornstarch.
Cook on low heat 5-7 minutes, stirring constantly until the sauce is thickened and the apples are a bit soft.
Set aside to cool.

Sprinkle Topping:
In a small bowl, mix the brown sugar, nutmeg and cinnamon together until well mixed and set aside.

Cake:
Preheat oven to 350 F. Grease and flour 9x13 baking dish. Set aside.
Cream butter and sugar until light and fluffy, about 3 minutes.
Add applesauce and vanilla until well mixed.
Add eggs, one at a time, beating well after each addition.
Sift the dry ingredients together.
Add 1/3 of the dry ingredients to the batter, add 1/2 of yogurt, 1/3 of dry ingredients, 1/2 of yogurt and then remaining 1/3 of dry ingredients.
Beat until just combined.
Spoon half of the batter into prepared pan.
Spoon the cooled apple mixture over the batter carefully and spread as evenly as possible.
Sprinkle 2/3 of the brown sugar/cinnamon mixture over the apples and cover with rest of batter.
Sprinkly rest of brown sugar/cinnamon mixture over batter.
Bake for 45-55 minutes, or until toothpick inserted into center of the cake comes out clean.

For glaze:
While the cake is baking, make the glaze.
In a bowl mix powdered sugar, vanilla and milk until glaze is desired consistency.
When cake comes out of the oven, immediately, but carefully pour over hot cake.
Try to pour as evenly as possible and spread with a spoon or knife.
Let the cake sit for awhile for the glaze to set.

Enjoy.
