Tortang talong or egg omelet is basically one whole eggplant that is charred, skinned and dipped in egg with fillings, and fried again until golden brown. This simple dish only take a few minutes that even an untrained cook can do it!

Tortang talong’s filling ingredients may vary depending on the person’s taste. The typical filling is ground beef or pork. But in this episode, Chris Urbano of Maputing Cooking uses tinapa flakes to show you how to cook tortang talong the healthier way. The smokey flavor of tinapa also compliments the charred skin of talong and adds to its distinct flavor.
