Vegan Caramel Apples:

  • 1 c vegan butter substitute (Earth Balance is my preference)
  • 2c sugar
  • 2c milk substitute
  • 1c light corn syrup
  • 1t salt
  • 1t vanilla

You'll also need 10 cookie or popsicle sticks and a candy/food thermometer

  1. Poke the sticks into the apples!
  2. In a large pot, add butter sub, sugar, milk sub, corn syrup and salt. When combined, turn up the heat and bring to a boil, stirring constantly.
  3. Continue to boil and stir until temperature reaches 245 degrees F. When it's reached this heat, remove from stove and stir in vanilla. Allow caramel 1-2 minutes to cool.
  4. Dip each apple in caramel, coating all sides evenly.
  5. Optional: sprinkle with chopped nuts, sprinkles, oreos, or any additional candy of your choosing!
  6. Allow to cool and ENJOY!
