NIGERIAN FRIED RICE

Nigerian Fried Rice is a Nigerian party favourite, it's just not a party without one. Most times people cannot choose between Fried Rice and Jollof Rice. Trust me you don't want to enter this dilemma.

Nigerian Fried Rice can be served with Chicken, Moi Moi, Nigerian Salad or Plantain.

INGREDIENTS

  1. 2 cigar cups | 500g long grain parboiled rice

  2. Vegetable Oil

  3. Chicken (whole chicken or chicken drumsticks)

  4. 1 tablespoon Nigerian curry powder

  5. 1 handful green beans and green peas

  6. 1 handful diced carrots

  7. 1 handful sweet corn

  8. 3 tablespoons diced red bell pepper

  9. Salt

  10. 2 onions

  11. 3 stock cubes

  12. 1 tablespoon thyme

DIRECTIONS

Set your cooking pot on heat, allow to dry, then pour in about 150ml of vegetable oil

Allow to heat then add the sliced onions stir for 1-2 minutes then add the chopped carrot and green beans, any of this two can actually go first. Add the cabbage also.

Stir for 1-2 minutes then add the curry powder, meat stock (water from the meat), add ground pepper (optional), add a teaspoon of salt, add 1-2 cubes of maggi or knorr then stir and taste, you may add more salt.

You would have a yellowish mixture which would often taste overly spiced, don’t worry the rice would balance the taste.

If you are satisfied with the taste then add the green pepper, stir, add the almost-done white rice, stir, cover your pot and cook for 5 to 10 minutes, you are done with fried rice.
