Healthy Gluten-free Quinoa Salad

Hello Steemians: here is one of my favorite quinoa (pronounced (KEEN-wah) "mother of all grains" recipes.

Quinoa is grain grown for its seed. So it's not really a grain cereal but a pseudo grain. In other words it's a seed but cooked treated and prepared like a grain.

Quinoa is one of the world’s most popular health foods. It is gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. This is particularly why I like it as I eat a mostly vegan diet.

It is also high in fiber, magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants. The list goes on.

_**It was considered the "mother of all grains" by the Incan Empire but only in the last years it has been deemed as a super food.

This super seed comes in 3 different colors white, red or black. For this recipe I used the white quinoa.

You could easily make this recipe raw and sprout the quinoa instead of cook it.

Here's is what you'll need...

  • 3/4 cup quinoa, uncooked
  • water
  • purple onion, diced about 1/2 cup
  • bell peppers, 1/2 cup diced
  • black sliced olives, One can drained
  • diced grape tomatoes
  • black beans, I can rinsed (I used pink because I forgot to get the black ones)
  • fresh cilantro
  • juice of one lime
  • olive oil, 1/3 cup
  • 1 TB cumin
  • salt to taste

Rinse the quinoa and cook according to package directions. It's usually 1 part quinoa to 2 parts water and bool until all the water is absorbed and it becomes fluffy. Set it aside to cool.

Dice onions, tomatoes, and peppers. Chop the cilantro up (I like a lot of cilantro) Add all the ingredients to quinoa and stir.

Enjoy!! Have it as a side salad or a meal itself. It is very filling.
