Marbled rib eye for the new menu

Hello all, this beautiful piece of meat is from the Dutch dual-purpose cow, first they are used as milking cows this process fattens the meat and gives it great flavor.
After that they stay on fresh grass for about a year.

This Beautiful piece will be pan seared and then slow cooked on the Big green egg with smokey jack Daniel's wood chips, then served with a pumpkin puree and a mustard jus.
