Classic squash caviar with apples

Ingredients


  • 3 tablespoons of vegetable oil;
  • 1 carrot;
  • 1 onion;
  • 2–3 tomatoes;
  • 3 zucchini;
  • 2 sour green apples;
  • 1 clove of garlic;
  • salt - to taste;
  • ground black pepper - to taste.

Cooking



Heat up some of the oil in a pan and fry the grated carrots to golden brown, as well as diced onion and peeled tomatoes. Separately, in the remaining oil, fry zucchini cubes until soft.

Put the vegetables in the pan. Peel apples and peels. Cut them into cubes and add to vegetables. Simmer over moderate heat, stirring occasionally, for about half an hour.

Add chopped garlic, salt and pepper and cook for another half hour. Beat the eggs with a blender until smooth, bring to a boil and boil for another 5 minutes.
