Couscous is a delicious Moroccan dish appreciated by everyone, it is often prepared on Friday and served after the "Joumou'a" prayer. We find couscous with 7 vegetables, chicken, raisins and onions, lamb, milk ... In short, here is the recipe of Moroccan couscous with lamb and vegetables that you will undoubtedly love. A true delight !

ingredients
(for 4 people)

  • 500 g leg of lamb
  • 500 g fine couscous semolina
  • 500 g carrots
  • 500 g turnips
  • 250 g squash
  • 2 tomatoes peeled and seeded
  • 2 courgettes
  • 1 bowl of soaked chickpeas or fresh beans
  • 1 onion
  • 1/2 bunch of coriander
  • ginger
  • warm water for semolina
  • salt pepper
  • olive oil

Preparation
1- Put the leg of lamb, onion and tomatoes cut into pieces in a pot with couscous, then add spices, olive oil and a small glass of water.
2- Stir from time to time for 10 minutes, add the chickpeas and cover with water. Cook covered for 15 minutes.
3- Wash the coriander, peel the vegetables and cut into medium sized pieces (as in the picture).
4- After 15 minutes, add the carrots, turnips and coriander. Cook for another 15 minutes, paying attention to the water level, add if necessary.
5- Put the zucchini and squash, cook for 15 minutes. In a large bowl, put the semolina and add the lukewarm water little by little, work it well. The semolina must absorb all the water and swell. Put some salt.
6- Put the semolina in the couscous basket for steaming for 20 minutes. Repeat the operation a second time.
7- Place the semolina in a large dish, dig a well in the center and arrange the vegetables and leg of lamb. Do not forget to present the broth separately in a soup tureen.
