For the last challenge I've done a vegan party!!
All the recipes are healthy, but the most important is the taste.

Recipe one: purple rolls:

Ingredients:

Red cabbage, quinoa, grated carrot, avocado, cilantro, basil, pistachios, olive oil, garlic, orange and sesame seeds.

Steps:

Cook the cabbage and quinoa.

Chop the herbs.

Cut the avocados and the carrot.

*Sauce: crush juice of an orange, a clove of garlic, a tablespoon of sesame and a tablespoon of olive oil.

Assemble the rolls.

Recipe two: vegan burgers.

Ingredients:

For burgers: half onion, two cloves of garlic, one zucchini, 2 tablespoons of cooked white beans, 1 cup of oatmeal, 1 cup of quinoa and a cup of sweet corn.

Hamburger 'bread, mayonnaise, basil, tomato, grated carrot and avocado.

Crush all the ingredients of the burgers in a food processor.

Take part of the dough and make grilled.

In the bread put the mayonnaise and the basil.

Assemble the hamburger with the carrot, tomato and avocado.

Recipe Three: Vegetable sandwich with red fruit mayonnaise.

Ingredients: Sandwich bread multicereal, red fruits, a pot of mayonnaise (if there is time homemade), tomato, arugula and avocado.

Steps:

Crush the mayonnaise with two tablespoons of red fruits.

Put on the bread a spoonful of red fruit mayonnaise.

Then tomato.
