Lazy Cook #1 healthy, vegan, summer salad (easy)

Easy peasy lemon squeezy salad (btw, you can actually squeeze lemon in it). I was looking for something that can be done in less than 3o minutes(yes, because I'm a lazy cook), is healthy, easy and can be eaten cold. This is an eggplant salad with tomatoes, carrot, bell pepper and onion. 

 Ingredients

  • eggplant (2-3 medium sized)
  • carrot (1)
  • tomatoes (2-3)
  • bell pepper (1-2)
  • onion (1-2)
  • garlic (optional)
  • salt
  • parsley (optional)

Prepare

  1. wash your eggplants. slice them 2-3 in width
  2. cut carrots in strips, bell pepper and onion in half circles 
  3. peel(optional) tomatoes and cut in any shape you like
  4. mince garlic

How to cook

  1. Grill (for healthier version) or fry eggplants both sides
  2. pour vegetable oil, when the pan is a little bit hot put carrots and cover it for 10 minutes
  3. add salted vegetables  in pan, cover for another 10 minutes, then turn the heat up for 3-5 minutes
  4. mix everything in a bowl, you can add parsley, lemon juice, balsamic vinegar.
