The recipe of the day is the famous Moroccan bakery specialty, Harcha or semolina cakes with milk.

My semolina recipe with milk

Ingredients :

  • 250g of fine semolina

  • 250g of medium semolina

  • 1 cup of oil

  • 1 Pinch of salt

  • 1 teaspoon baking powder

  • 1 teaspoon dry yeast

  • 1 teaspoon sugar

  • 1 cup warm milk

Method of semolina cakes

  1. In a bowl, place the semolina, then work it with the oil to coat each semolina grain with fat.

  2. Incorporate all remaining ingredients into the semolina by mixing quickly without working the dough.

  3. The paste obtained is liquid, let it completely absorb the milk (about 20 to 30 minutes depending on the quality of the semolina).

  4. Heat a skillet, sprinkle with semolina and then take a ball of semolina paste and flatten it directly into the pan.

  5. Let the pancake cook about 2 minutes before turning it with a spatula.

  6. Once cooked and browned, remove the patty from the pan.

  7. Wipe the pan and start again until the dough is used up.

  8. You can serve the Harchas with honey or jam.
