Cottage Loaf

There's something magical about making bread.

It isn't something I do often, but I keep supplies on hand, including a sourdough starter I maintain, just in case I feel like rocking out a loaf of one kind or another. This weekend, I made a cottage loaf.

A cottage loaf is a basic white loaf. It is essentially two round loaves, one on top of the other, with the top loaf being smaller. While its history is murky, it is surmised that it originated as a way to save space in bread ovens.

The recipe for this loaf is here. Because it is late Autumn here, the air is very dry and I found I needed to add some extra water.

Not my prettiest cottage loaf. But bread doesn't have to be pretty to be eaten.
