Gluten Free Banana Honey Muffins

Let me tell you that these muffins didn't last long and the house smelled amazing! This recipe is simple, moist and bursting with flavor. (That's what she said) I don't see why you need to put so much sweetener​ when you already have an ingredient​ that is super sweet. If you like your baked goods super sweet, double the honey but you won't regret making it with less honey.

INGREDIENTS

Makes about 14 muffins

  • 1 1/2 cups of GF all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 very ripe bananas
  • 1/4 cup of honey
  • 1/2 teaspoon salt
  • 1 egg
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 1/3 cup melted unsalted butter


INSTRUCTIONS

  1. Preheat oven to 350 degrees F (175 degrees C)

  2. In a large mixing bowl, sift the flour, baking powder, baking soda, salt, ground cinnamon, ground ginger.

  3. In ​another bowl, mash bananas.

(My kiddos had a great time mashing the bananas!)

  1. Once bananas are mashed, add egg, honey, melted butter, ​and vanilla.

  2. Fold dry ingredients in with the wet ingredients until all is combined. DO NOT OVER MIX!

  3. Spray your muffin tin with non-stick spray or use paper liners.

  4. Scoop 1/4 cup of the batter in the liners.

  5. Bake for about 15-20 minutes.

  6. Wait for them to cool slightly.

  7. ENJOY!
