Kenyan Style Chicken Curry. Yumm!

I visited some friends of mine in Kenya over the Holidays and got to be served this dish. I fell in love with it sumptously. Chicken curry with rice is now a favorite food for me. I love the simple flavours in this dish that pair so well with some steamed rice or chapati’s (Kenyan "Indian bread"). Get your taste buds ready because I learnt the recipe and I am sharing it with you. This dish is also referred to as Dhania chicken in a lot of restaurants around Kenya - Dhania is a local name for coriander.

SERVES 4

INGREDIENTS
3 tbsp oil
1 large onion, chopped
1 tbsp ginger, chopped
1 tbsp garlic, chopped
1 tbsp green chillies, chopped
2 tbsp coriander-cumin powder
1 tsp turmeric powder
1/2 tsp chili powder
2 cups tomatoes, pureed
Salt to taste
1 tbsp tomato paste
1 chicken, cut into pieces
1/2 cup plain yoghurt
Coriander leaves, chopped
Serve with steamed Aromatic Rice

INSTRUCTIONS

Heat oil in a heavy bottomed pan. Add onions and stir for 1 minute or until translucent.

Add ginger, garlic and green chillies and cook for another 45 seconds.

Add the coriander-cumin powder, turmeric powder and chili powder and stir.

Pour in the tomatoes, tomato paste and salt and cook for 20 minutes or until oil starts to ooze out of the tomatoes.

Add the chicken and cook for 20-25 minutes. Stir in the yoghurt and cook for 2-3 minutes.

Garnish with coriander leaves and serve with steamed Aromatic rice.
