BANANA COCONUT AND CHUNKY CHOCOLATE MUFFINS

Healthy muffins – perfect for the lunch box or Sunday mornings.
INGREDIENTS
4 ripe bananas
4 eggs – free range
1/3 cup of coconut oil
½ cup of coconut flour
½ cup of coconut – shredded
1 teaspoon of baking soda
a pinch of salt
1 cup of dark chocolate – chopped
METHOD
Preheat oven to 370F.
Grease a 9-hole muffin tray.
In a food processor, blitz, banana, eggs, oil, flour, coconut, baking soda, and salt.
Pour into a bowl and add chocolate.
Spoon into your prepared muffin tray.
Into the oven for 25 minutes baking. Yum!
