Whole Wheat Pancakes

These sugar-free pancakes are a healthy treat for the whole family. A touch of raw honey adds just the right touch of sweetness. And the cinnamon has been shown to benefit insulin resistance. You can substitute apples or berries for the banana if you wish. Serve with a sugar-free syrup or sliced fruit.
Servings: 6
Cooking Times: 5 minutes
Ingredients:
1 ½ cups of fat-free biscuit mix
½ cup of whole wheat flour
¼ cup of flaxseed meal
1 tsp. of baking powder
1 tsp. of cinnamon
2 eggs
1 ½ cups of soy milk or buttermilk
1 mashed banana
3 tbsp. of raw honey

Directions:

  1. Combine the dry ingredients in a bowl.
  2. Whisk the eggs, milk, honey and mashed banana with a hand mixer.
  3. Stir the egg mixture with the flour and combine well.
  4. Coat the skillet with non-stick spray.
  5. Each pancake should be ¼ cup of batter.
  6. Cook the pancakes in batches until they are a golden brown. Flip them when the top starts to bubble and cook the other side.

Quinoa Waffles

These delicious waffles are moist and fluffy and totally delicious. There’s really no need to tell the kids that they are also super-healthy, sugar-free and teeming with protein. What better way to start the day! They taste great topped with berries.
Servings: 4
Cooking Time: 10

Ingredients
1 ¼ cup of quinoa flour
2 tbsp. of almond flour
3 tsp. of Stevia
1 tsp. of cinnamon
¼ tsp. of baking powder
1/8 tsp. of salt
1/8 tsp. of vanilla
½ cup of almond milk
1 egg (only the whites; freeze the yolk for another time)
1 tbs. of sugar-free applesauce

Directions:

  1. Preheat a waffle iron.
  2. Mix in a bowl all the dry ingredients.
  3. In another bowl, combine the egg white, almond milk, vanilla and the applesauce.
  4. Add both the dry and the wet ingredients and stir together thoroughly.
  5. Coat the waffle iron with a non-stick spray.
  6. Get the waffle iron filled with half of the batter.
  7. Cook for about 30 seconds and flip.
  8. Cook for about 2 minutes and set the waffle iron back upright.
  9. Check if the waffles are done. Cook for an additional minute or so if needed.
  10. Enjoy the waffles with fruit, berries or sugar-free syrup.
