ARTICHOKE TIME | HOW I EAT THEM | RECIPE

I love especially seasonal food, as it is not available for the whole year.
Right now in Catalunya we have the high season of artichokes and we enjoy this healthy dish as often as possible. Around May, when the temperatures getting warmer, they will no longer grow and we have to wait another year.
How do I like to eat them?
As easy as possible and I’m sharing today with you how.

  1. Cut the stalk directly at the bottom of the rose
  2. Smash the rose upside down 3x on the counter, so the rose is opening more wide
  3. Place a full clove of garlic inside the rose
  4. Pour some good olive oil over the rose, don’t be greedy with the oil, more is better
  5. Top everything with a good pinch of coarse salt (I usually take 2-3 pinches)
  6. Preheat the oven to 180 degree and let them bake for about 45min

The outside leaves will turn pitch black.

Let them cool down a bit and start to pluck leaf by leaf.
Hold the top part on the leaf and eat just the soft down part of it.
The combination of the artichoke flavor combined with the olive oil and salt is amazing.
