What do you do when teenagers rush off in mornings... Leaving breakfast...running out the door, with shouts of mumma I'm late.no time to sit and eat... . 🙄🙄eye roll.. of course(after all we've also learnt a few things from them 😂😂)
But also rack the brains for an alternate... So, here's one...
Power Packed Breakfast Cookies...
Full of goodness... Oats, broken wheat, crushed walnuts and pecans, black raisins, Dates and figs..... And sweetened with very little jaggery... The only indulgence here.. Some chocolate chips❤️❤️
Recipe and Ingredients
3/4 cup oats
1/2 cup fine dalia
4 tbsp cornflour
1/2 tsp baking powder
1/4 tsp baking soda
A pinch of cinnamon
Mix all these and keep aside.
8-10 dates
3-4 figs
Soak in 2 tbsp of lukewarm milk for 20 minutes. Blend and keep aside.
Or you can just Chop them fine and add while adding nuts.
1/2 cup chopped walnuts, pecans (or any other nuts you like)
2 tbsp sesame seeds
2 tbsp raisins
2 tbsp dried berries
4 tbsp butter
1/2 cup jaggery powder
Chocolate chips
Whisk butter and sugar till creamy. Add the dates and fig puree. Gently fold in the flour mix. If adding chopped dates add now. Add the nuts and raisins etc. It should be a soft dough like lump. If dry add a spoon of milk till it comes together. Make small balls and flatten a bit. add chocolate chip on top. Bake in a preheated oven at 160 for 15 minutes. Cool completely before storing.
